Nam Wan Kuay

Nam wan Kuay


More than a dessert is Nam wan kuay. It has softness and smoothness when chewing the bananas, along with creamy coconut milk. My grandma loved to eat this dessert and told my sister to make it. When we have a hand of banana and are slightly ripe, we will make this recipe, Nam wan kuay. It is easy and has no complexity to making it. Just peel off the skin, wash the bananas, boil, and add coconut milk and sugar, then you have a delicious Nam wan kuay. It can be in the fridge for more than 1 week and serve as a snack or dessert after the meal. It is also part of the Buddhist day dessert for worship. On those days, dessert will be selling more than usual at the local market.

Ingredients

2 hand of Banana

100g Coconut sugar

500ml Coconut milk

1/2 teaspoon Salt

800 ml Water


Material

Spatula or ladle

Steel casserole

Knife

Gas burner


Directions

  1. Fill the water in the casserole dish and heat it on high heat.

  2. While waiting for it to boil or start bubbling, peel off the banana skin and cut it into four chunks. Transfer it to the steel bowl or a bowl and wash it with room temperature water by moving back and forth. Transfer it into a colander to remove the excess water.

  3. When the water comes to a boil, gently transfer the water by a wooden spatula or spoon to prevent it from splashing the hot water on you. Give it a stir for a little and wait until it boils.

  4. Use a fork to check the softness of bananas by it cut through then it is ready.

  5. Drain out the water and leave ⅓ of it. Add sugar and coconut milk into the casserole and stir for about 20 - 30 seconds. Close the lid but not completely close it, and leave a small space to let the air out and avoid the overflow water when it boils.

  6. Once the sugar has dissolved and comes to a boil, turn off the heat and let it cool, then you can serve it.

  7. Once it cools, transfer into a small bowl. Share and Enjoy!





Storage

Transfer into a small casserole dish or casserole that can fit the refrigerator. Keep in the fridge and eat whenever you want. It can last up to 1 to 2 weeks or, it does not have a weird smell or is sour, then it still can be eaten.
